Mexican Bean Rice by Unity

Vegan -serves 4

1 garlic clove, crushed
1 red onion, finely chopped
1 red pepper, finely chopped
1 yellow pepper, finely chopped
1 green pepper, finely chopped
200g or 1 cup of brown rice
1 tsp oregano
1 tsp cumin seeds
1/2 tsp paprika
1 tbsp tomato puree
pinch of salt
2 cans of mixed beans (drained and rinsed)
1 pint or 2 cups of vegetable stock

Heat a little olive oil in a large pan, add the onion, garlic and peppers and fry gently for 3 minutes. 

Add rice, spices, herbs and salt. 

Stir well and leave for a few minutes. 

Add tomato puree, stir well and cook for 2 minutes. 

Pour in stock and beans, bring to boil and simmer for 30 minutes, stirring occasionally (add more stock or water if needed).

Can be eaten alone or in tortilla wraps.
