October Rhythms of Magic: Butternut Squash, chilli and ginger soup


This is a lovely simple warming soup for this time of year. I love Butternut squash and the added Chilli and Ginger give it a kick, taste wise and magically both being spices of Mars and Fire.

Magical properties for Chilli: creativity, energy, power, protection, passion and hex breaking.

Magical properties for Ginger: money, success, power, love, cleansing, protection and consecration.

Butternut Squash is related to Pumpkin, so you get the associations with Samhain/Halloween and the Magical properties: Prosperity, crone magic and healing.

The magical properties of Coriander are: health, healing, peace, love, release, wealth and protection, and it is another herb of Mars and Fire.



Serves 6

Ingredients:

1 tbsp. olive oil
50g butter
1 large Butternut squash, peeled, de-seeded and diced
2 onions, diced
3 garlic cloves, crushed
1 red chilli, finely chopped
1 thumb -sized piece of ginger root, peeled and grated
900ml Vegetable stock
Salt and Pepper.

Method:

Heat the oil and butter in a large saucepan over a medium heat, add the Butternut squash, onion and garlic and cook for 5 minutes.

Add the chilli and ginger and cook for a further 5 minutes.

Add the hot stock, bring to boil, cover and simmer for 15-20 minutes until the squash is soft.

Blend in batches until smooth.


Re-heat gently, season to taste and garnish with coriander.
